Yes, Goose Island has some good local brews, and I'm sure I could find one that would work with the apples...if you ever come across a Pacific Rose apple, give it a try. They are hard to find around here, but worth the search - your area may have them in abundance for all I know! It is a fantastic crisp, very sweet apple that would be excellent in your baked apple dish, I'm sure...we also like them on grilled ham and cheese sandwiches - or with some blue cheese on the slices...another good food with beer!

Sounds like you have good taste in beer as well.
All-Grain is not as hard or time consuming as you think it is.
Pretty much all your doing is essentially making your own extract.
One difference between All Grain and extract is boil volumes.
But it's not tough, Once you get past the first hurdle.
That being trying to over think it. :)
