I cut the marshmallows right away after removing them from the pan, but I first coated the surface with powdered sugar, and would add extra if they seemed to stick to my knife. A pizza cutter actually works pretty well here, that's what I used, on a large cutting board also dusted with powdered sugar. Once they're cut, be sure to toss them in more powdered sugar so they don't stick together too much.
