The catfish sauce recipe is from the catfish festival in Des Alemands, Louisiana. Its put on by the local catholic church and they don't give out the receipe even though they sell a cookbook. but they gave it to the Sauce Piquante Festival in neighboring Raceland, LA. And this is it. From teh Sauce Piquante cookbook. this is a killer dish!
