  • mbelisle 2 months ago about Creamy Rice Pudding
I made this with a major number of substitutions as I didn't have much on hand. I cut to 1/3 of the original recipe using the ratio of 4 parts milk to one part rice. We don't get fresh milk or cream here so I mixed up powdered but at a higher ratio than average to water to use in both cases. I did the rice in the milk but it absorbed too quickly before the rice was cooked so I ended up gradually adding the remaining milk that was meant to replace the cream as part of the cooking process. After about 30 minutes the rice was done so I stirred in some honey (no sugar available) and a beaten egg. I also added a pinch of salt during the cooking time. To finish it off, because I have no cinnamon, vanilla or any other flavouring to speak of, I will stir in a bit of cherry preserves that I have. All in all a good recipe though and hit the spot for something sweet and comforting.

Thanks for comments on the Ground Beef Skewers. They are really yummy. Enjoy! And you could totally change up the sauce...you could do a nice beef gravy with them alongside mashed potatoes, etc.

So sorry I missed you comment on the pork loin.. it was ages ago.. I have not been on GR in months.

I have a digital meat thermometer that singles me when it is done. I don't know how I did without it before... Takes all the guess work out. And sometimes I can be such a "airhead" when I have lots of people around when I am cooking. I get too busy talking! LOL That little gadget keeps me on track..

    Anytbea,
I saw a post by you commenting on preserving breen beans by the oven method rather than water bath. You sounded as if you have experience preserving this way, is it safe?, how long have you done it? how many things - like tomatoes, applesauce etc? Is there a guide somewhere? Any information will help.
    Thanks a million
