    I put the pectin in with the juice, bring to a boil - add TBS butter - sugar (I use more sugar) bring to a rolling boil for 1 minute. The butter helps with the foam.

    I sliced Yukon gold, added various seasonings (garlic, onion, paprika, black pepper, salt) as I realized I didn't have any onions. BUT your recipe totally reminded me of my mom's who is from N. Carolina. Thanks so much for the memories and for my mom as well who has early stage dementia. This was perfect for her.
