there is no set amount - it all depends on the amount of chicken pieces in the pan (pans), the size of the pan, the amount of coating that's remaind in the pan after removing the chicken.
Just pour off the fat, pour in the milk, stirring continuously and then see how thick or thin the gravy is going to be. then you check the taste - i sometimes add just a pinch of salt or a turn or two of the pepper mill, a dash of worcester-sauce. just try it out and do not pour in too much milk at once.
i am sure you are going to have a perfect gravy.
