Chichi - hooray! I am glad that both the Roasted Vegetable recipe and the related Winter Vegetable Soup recipe are your kind of recipes, too. Totally easy and healthy and delicious.

Chichi - virtually every cookbook has "winners and losers" for any of us in terms of what we'd make. As you wisely observed, it's sifting through as to what suits each of our tastes, style, and level of comfort. Me - I see cilantro as an integral ingredient and know it'll taste like soap to me and won't try the recipe. You get the point.
FYI - you need to have me teach you to shop like a pro. I've bought a number of Ina's cookbooks at Costco for about $19. Also, check out pricing on Amazon. I get great buys there, too. Google the titles you want as well and you're off to bargains, ebay, too! I shop... therefore I am.
I think smart cookbook writers cite specific ingredients to enusre great results knowing lesser quality input can't match the level of when they prepare the recipe. Your husband sounds like a gem.
