I would like to see some of your smoke recipes, and learn a little about how to do it. I was a chef for about 30 years, and although I always cook from scratch, I never learned how to smoke food.
I also love to bake, and I have learned to make Chinese food pretty well. I'm currently teaching myself Japanese cooking, with emphasis on sushi. When I get good enough, I'll publish some recipes. I know the theory of preserving pretty well, but have not done much of it, with the exception of jams and jellies.
I look forward to seeing some of your soups on the site. I love soup in the winter, and slow-cooked stews. Italian cooking is also a favorite.
