Hi Courtbot,
I use the powdered cane sugar, but I think you can use icing sugar as well. The powdered cane sugar also is known as confectioners sugar and it is just white sugar ground into a fine powder with corn starch. I have never used icing sugar. Does it have the corn starch too? Thanks, Kristyn

Good luck on your cake decorating classes! You are definitely going to have fun in those! Thanks for the nice comments. I can't wait to see some pics of yours when you make some from your classes. I try to always make my cakes and icings from scratch and use real butter. It really makes a difference in how much people will buy your cakes over someone elses who just use cake mixes out of a box. Good luck on opening your own place. Take Care, Kristyn (cakelady)
