I've never made the red velvet cake in cupcake form, however I wouldn't see why they wouldn't work. The only thing you might want to consider: is that the cake is very dense & by splitting the cake into layers with frosting between it breaks up the denseness of the cake. With cupcakes you won't have that. Let me know if you try the cupcake route. Good Luck!
