Hi, thanks for the comment and rating on the Roasted Red Potato Bites. I'm sure you can substitute practically anything for the bacon, were you thinking of making them purely veg? If so, maybe corn niblets? I'm thinking something with a bit of snap and sweetness might work. If not i.e. if another meat would work, some cooked crumbled ground beef perhaps? If I think of anything else I'll let you know. In the meantime, I hope you have a memorable (in a good way!) New Year! :-)

We always have pork for New Years for good luck. I also live in an area where it is hard to find ethnic ingredients and that makes adventerous cooking a challenge!
