    Thanks for the recipe, I will be smoking the meat today. Out of curiosity how do you test the salinity for the rub?

    Well, it was successful. The only thing was it was really salty even with soaking it for an hour. Aside from the saltiness it was very good and in a sandwich it would be much more palatable. definitely will do it again.

    I am so glad you are loving the homemade pancetta recipe...Please forgive my mistake in not mentioning how hard it is to tie it all together. I will amend that when I get a chance...It really IS good, isn't it? I'm jealous...wish I could try a piece! Cheers

    Thank you for the comment and rating on the Tomato Soup. Waiting for those tomatoes and although here in Florida we have veggies all year round almost...the best are from our garden. Mine are coming along beautifully. Rain and sun ...looks like they will be along at the right time.
