Wow! Looking back at the message above, I feel like I need to apologize for rambling on! :)

You mentioned on your page that your husband is from Italian heritage; I am as well. My grandparents on my Dad's side are from Italy...one from Cicily, and one from Tuscany. My dad and my grandmother taught me how to cook Italian meals which is what I prefer to cook. People always ask me for my recipes and I just have to tell them that it's in my head. These are authentic recipes that you don't follow from recipes. They taught me by showing me, not by a recipe. This is what I've been doing with my 2 daughters. One day when they are out on their own they will be able to cook as my dad, grandmother and I do. It's really very special...like passing on family tradition.
Didn't mean to ramble, just thought it was interesting that your husband is Italian too. (I'm from New York, but live in South Carolina. My husband is southern through and through but has gotten accustomed to my cooking and now prefers it over southern cooking!)

I always use recipes as a starting point as well even when I am baking I tend to change the recipe for my familiy's tastes. I grew up on a farm and recipes were rarely used - you learned how to cook from watching and asking. Recipes were only for speacial occasions and experimenting.
My husband's family (mother and father) are from Calabria in southern Italy near Cousenza (sp?). He has family in upstate New York, South Carolina, Chicago, California and Arizona as well as Canada. I like southern cooking except it is soo fattening! It was hard to order a meal when travelling and get used to the fact that even the vegetables were cooked in bacon fat or had cream added!! They say the difference between French cooking and Italian cooking is that in French it is all about the chef and in Italian it is all about the food. I agree. As I get more experienced in cooking the simpler I try and make my dishes to allow the falovour of the ingredients to shine.
Nice rambing with you.
