If your using a newer model crock-pot with an old recipe... it could be cooking too long.. I just purchased a new one.. and my tried and true recipes were done.. HOURS ahead of time... with a poultry.. that could really mess it up.. Does yours boil on the low setting.. Mine has 3 settings.. Low-High-and warm... it was boiling real slow on the warm setting... which my old one did not... Not sure if this is what is your problem.. Just a thought..

I, too, had a bit of flavour problems when I first started to use my slow cooker. Since then, however, I have learned to use it properly -- in fact, I now have 2 of them; a lrage 7-quart one, and a wee 1-quart.

Meanwhile, I have a ton of new slow-cooker recipes; some I've posted to the site, some yet to get there. If you tell me what kind of food you would like to try in your slow cooker (and, the size of yours) I would be happy to see what recipes I have.
Meanwhile, if the taste is too watery or bland, it's usualy because you have too much water (or other non-flavoured liquid) in the crock. Generally, slow-cooker recipes require somewhere between little and no moisture, as very little escapes during the long cooking time!
