    Do you have many for eggplant?
    How about your sauce or meatballs. These are things that I'm always on the look out for. I've had some wonderful food from a Sicilian mama and it's fantastic, but no recipes for it. I just have to work on figuring out what's in it.

    I saw your comment to Mr. Peter about chicken wings. I watched Alton Brown do crispy chicken wings in the oven the other day -- that was his sole purpose, to get a crispy wing without deep frying. The first thing he said was very important is that the wings are chilled for two hours before beginning the process. The next step in the process was steaming them on vegetable steamers over water for 20 minutes. That draws alot of the fat out of them so that you don't have a smoking oven when you bake them and it makes them crispier. Next, when you bake them, don't overcrowd your cookie sheet or they cannot brown properly. I think he said to bake them for 20 minutes, turning once after 10 minutes in a 400 oven, but you can check the Alton Brown comment which is included as one of my recipes and it will tell you. I put the whole thing up as a tip the day after I saw the show! He was doing buffalo wings so he didn't put any sauce or coating or anything on them before he baked them, but he slathered them in buffalo sauce (hot sauce and melted butter) afterwards. Good luck!
