Raised in East TN with a mom from NC who can cook some food! I have been trying to learn from her for about the last 15 years. I'm an engineer by education, and I think there is a place for exactness in cooking, but mostly like to eyeball measurements and tinker with recipes by adding what I think sounds good, especially in spices and herbs. Sometimes doesn't turn out so great, but more times than not has turned out good, and it is always interesting! I like easy one pot (or pan) dishes like roasts, chicken-n-dumplins, pot pie, stir fry, soups, curries, casseroles, spaghetti, chili, pizza, etc. I also like to wood-smoke foods. My wife, 8 year old son and I disagree about food tastes, so every now and then I get to cook what I want, otherwise I would never see it at my house!
