    I love Sans Rival... I hope to be able to make 1 one of these days. To toninoname, cream of tartar helps in stabilizing the bubbles of egg whites for it to form stiff peaks. Egg whites will still form stiff peaks without it but it will take a little bit more time of whisking. Have you tried this recipe yet? How did it go?
