    Thanks for asking, Gabby2. The purpose of the hot water bath is to heat and expand the pickling liquid and tightly seal the jar while the liquid is hot. When the liquid cools and (re)contracts, it causes a vacuum to form in the jar and helps to prevent spoilage.

    This recipe calles for completely submersing the veggies in BOILING liquid and immediately sealing the jar, thus producing a vacuum as the liquid cools. If you wish to use the hot water bath when making these pickles, it will not hurt the picklles.
