Retired old guy. Discovered Chinese food in Taiwan in the early 1950's. Paternal Grandparents from France, cooking was a very important part of their life. and Blue-nosed English-American maternal parents. Cooking was a survival chore in their life. Chinese food (In Taiwan) changed my eating habits from the rich French county to include mega-layered Chinese spicy and elegantly prepared dishes.
I have never mastered the elegant Chinese, or for that matter the elegant French cuisines, but come very close . Always looking for different tastes and recipes.
Recently I have been visiting a lot of Vietnamese and Thai food restaurants and really enjoy these also.
