About me
I love to cook food and I love to eat food. I would say that I am more of a Food Enthusiast than a Foodie. Food doesn't always need to be gourmet or expensive, it just needs to taste good! I am starting to challenge myself more in the kitchen. I have been making artisian breads and more complicated meals. I am very lucky that my husband will eat anything, and I will try anything at least once!

Cajun Chicken Salad

Thanks everyone. We just had this for dinner last night again and it was just wonderful. Easy for weeknight dinners, but with a little sass!

I made this for lunch today, and it is positively delicious! Making the nuts just for one lunch was a bit time consuming (although would be right on par for a dinner), so I t
