About me
Just turned 50, have beaten cancer, quit my job of nearly 25 years, and am joining my sister to start a new restaurant. I'm starting the second half with a whole new aspect on life. My position is dessert manager/mad scientist and have a stack of experiments for the restaurant about 1 1/2 inches tall(which worries my sister, but thrills her husband). I have over 200 recipes for cheesecakes, including 30+ appetizer/savory cakes. Please feel free to ask or suggest a flavor or variation, and I will try to accommodate your request.

Question... On the cheese cake you just posted. Starting at 500 then turning down. Is that something that would help keep it from cracking? I have tried several ways... water under... The cracking does not effect the taste and I usually can hide with a sour cream smear... What is your input on that please.
