Thanks for your comment on the Super Squash Salad. Pimientos are a sweet variety of the capsicum pepper, or the red bell-shaped pepper. The brand I have on hand now is CENTO SLICED SWEET PIMIENTOS, www.cento.com. I have used other brands. If you can't find them in a small jar, then just add a fresh red bell shaped pepper. I love pimientos, because they add so much flavor to cheese, vegetables, cream sauces, salads, etc. Hope you enjoy the salad, and I hope this has answered your question. Happy cookin'! :)
