    Hi, i am from England and we have jars of different curry pastes over here ranging from jalfrezi to tandoori, the madras curry paste is a mixture of spices and herbs from the madras area in india, i always use pataks curry paste see if you can look it up on the internet. If you can't buy them over there here is a recipe i pulled off the internet that might be useful:-
    2 1/2 tablespoons coriander seeds, dry-roasted and ground
    1 tablespoon cumin seeds, dry roasted and ground
    1 teaspoon brown mustard seeds
    1/2 teaspoon cracked black peppercorns
    1 teaspoon chili powder
    1 teaspoon ground turmeric
    2 cloves crushed garlic
    2 teaspoons grated fresh ginger
    3-4 tablespoons white vinegar

    Put all ingredients except vinegar into small bowl and mix together well.
    Add the vinegar and mix to a smooth paste.
    Keep for up to one month in an airtight container in fridge.

    Remember not to add too much of this paste otherwise it will overpower the dish. Happy cooking!
