Here is your answer from a German pastry shop:
Hi JJ,
The pastry is called a “Spritz Geback” . In English we call it a French Crueller. I am not sure if I spelled the “Geback” part correctly or if it has different names in different regions of Germany. But our Chef from Heidelberg said that is what he calls it.
I hope this helps! Carla

I did a google search, then sent emails to pastry shops specializing in German pastry and she was kind enough to reply.
