About me
I'm an opera singer, with three jobs, two cats, many friends, a couple of boyfriends and -- best of all -- a crockpot! (Just kidding.) I live in New York City on almost nothing, so recipes with beans and rice and vegetables make me very happy. As an artist, I'm also a bit sybaritic, so rich cheeses, red wine and luscious chocolate make me even happier!

Hi Cattrix, thanks for your comments. I agree, this recipe would be very good adapted for low sodium. Just substitute "low-salt packed" canned tomatoes for the regular kind,

My farmer's market tomatoes were medeocre too, however we had very sweet and crunch cucumbers this year. Our squash are gorgeous. My kids love the acorn and carnival squash. Hope you enjoy the soup!
