You can actually leave the mushrooms and onions in the pan, too, and make a sticky ugly mess of "roux" with them still in it, but, as a beginner, I think you made the right call cus it mighta looked "wrong" to you if you aren't familiar with this way of cooking...and I'm sorry I missed the half and half step...I didn't notice :(...and, the dish was meant to be uncovered, so good call, there.
