    Hey, Laura. Sorry, I haven't been on here for a while. Just found your question about the Russian strawberry cake. You first fold in 1/3 of the egg white mixture into the egg yolks, then fold in the sifted dry ingredients into that. Only after that you add the rest of the beaten egg whites to the batter, folding carefully. Remember to fold gently, not whip or stir it in, otherwise the dough won't be light. Hope this helps.
