Thanks for answering my invite...The celiac isn't so hard to work around any more--I've gotten used to swapping out flour for sweet rice flour, amaranth, teff, etc. I tend to stay away from rice flour & tapioca starch as they have so little nutritional value. The amaranth & teff have great fiber & protein along with good taste! I'll be posting my version of gluten free amaranth bread soon...one of these evenings when the kids are asleep & I'm still awake! HA! :o)
