I actually can get it here in Orlando at my Publix, but I'm from East TN and I don't remember ever seeing it much. I do think 'Fresh Market' carried yucca...so if you have one of their stores anywhere near you, you might look there. Good luck with that. I have to say your adaptation with the potatoes sounds good and close, if you stick with the regular evaporated milk. :)
