About me
First, I love to cook--won't say it's always perfect, but friends enjoy when I invite them over--never had a refusal. Born and raised in the South, USA (NC), but now live in Ireland. I've had to change a lot about my cooking since I moved to Ireland as there are still a lot of 'old standby' ingredients that I can't get here (so I love copycat receipes). I love to cook for a crowd; I've have found that folks are so impressed that you can dish up a dinner for a bunch, that they are not so critical that you have to put out the salt shaker, and I'm always willing to try new dishes. I love appetizers (aka Starters in Ireland) and main dishes--not much on desserts (highly allergic to chocloate--good thing too as I already have enough 'padding'). Since I moved to Ireland, my claim to fame is Southern Fried Chicken--folks here didn't realize that it could be 'cooked at home'--yes, there is a KFC here and prior to that most had not heard of fried chicken in Ireland--but now it is my most requested recipe.
