Actually, no. I have not used any other fish with this cream sauce. As for halibut in particular I have mostly used a Cajun sauce, Meunière. Meunière Sauce is a brown butter sauce with added exotic flavors. It is wonderful with baked white fish or any oily fish fillets or steaks.
I'll post it for you. When you try the cream sauce with halibut, let me know how it comes out. Since you get halibut, you probably can get tuna steaks as well. Check out my recipe for Tuna Steaks Ricardo, That is a fantastic dish and will give you all kinds of ideas. Happy eating.
