I recently graduated from college and got a job, and am excited to have some free time and money to cook. I love the chemistry of baking and want to learn to make bread and flaky pastries. I also am eager to explore the foods of other countries, especially those of Indian and Southeast Asia.

How long does it take the curds to drain & cool completely? Also, how much paneer do you end up with? I really like paneer in a curry with some greens.
