    Dear Mat,

    I am really grateful for your comments. Now that you have tasted the traditional dish, I wish to inform you that "Chili" is cooked a zillion different ways all around the world. Every year in a West Texas town, called Terlingua, there is a Worldwide Chili Cook-off. At this gathering, Chili is made from any and every thing the cooks could catch or run over with their trucks! Armadillo and local Diamondback Rattlesnakes included. So, to answer your question...YES!

    OK Amigo, For a place to start your search for knowledge; use the computer search engines. Search topices like Mexican Chilies, Tex-Mex or Sonoran Mexican Cooking; Myan Foods and Cuisine, etc. Most of these will give you other sources to search and also try Mexican Cookbooks. Believe me, you'll find more thatn you can read.

    Hi Mat,

    The ancho chilies are the dried ripe poblano chile The Mexican chilies are a bit confusing, since they rename the gree chilies once they are dried. It is further confusing since different parts of Mexico, use the same names for different chilies..
    The Aztec and Myan Indians developed the use of the smokey, rustic flavors from the chilies and they are quite a considerable rangew of flavors. It is well worth getting a good Mexican cookbook to research these wonderful flavors.
