About me
Hi, I've been cooking for four years now. My interest was spurred on by my obsession with Indian food, but now I really like cooking food from all parts of the world, as long as it's authentic. My favourite cuisine is Thai, but I really want to explore Japanese food. I recently went backpacking and it was amazing sampling different foods. I met a lot of Japanese and Korean backpackers and we had some great times cooking for each other. I often added a western touch to their noodle dishes and we came up with some interesting concoctions. I joined this website because I found some really great recipes through it.

OK Amigo, For a place to start your search for knowledge; use the computer search engines. Search topices like Mexican Chilies, Tex-Mex or Sonoran Mexican Cooking; Myan Foods and Cuisine, etc. Most of these will give you other sources to search and also try Mexican Cookbooks. Believe me, you'll find more thatn you can read.

Hi Mat,

The ancho chilies are the dried ripe poblano chile The Mexican chilies are a bit confusing, since they rename the gree chilies once they are dried. It is further confusing since different parts of Mexico, use the same names for different chilies..
The Aztec and Myan Indians developed the use of the smokey, rustic flavors from the chilies and they are quite a considerable rangew of flavors. It is well worth getting a good Mexican cookbook to research these wonderful flavors.
