Basically what it is is bologna with specks of fat or olives in it. The imported mortadella tastes more like ham where as domestic usually tastes more like bologna.
I would substitute with a meat that has a similar flavor quality, maybe a high quality smoked ham or very thinly sliced bologna...which ever taste you prefer. What ever you choose, I'm sure it will be delicious! The real star of this sandwich is the olive salad you put on it!!
