    You can substitute anything you want. I have used red potatoes and yukon gold potatoes. Depending on the status of my cupboards - LOL.

    I love my garlic......I think I was weaned on garlic. LOL So happy you had a good meal. Just the way it should be, buttery, a little spice and lots of garlic. Thanks Michelle.

    Liv and I snacked on the caponata right out of the bowl. I bet if you used coconut oil, agave, you would be good for paleo. She thought it was a tad too sweet so we added a bit more red wine vinegar and a generous pinch more of crushed red pepper. Fred would not TOUCH it. Eggplant is not his friend. LOL on your brother still trick or treating....my niece was the same...thankfully at 25 with a baby she became the mom pushing the baby carriage.

    This is sooo good! I had cherry tomatoes, basil and just plain ol' parsley from my garden. I used some leftover pizza sauce instead of tomato sauce and did not use the cream. Delicious and I think the cream can easily be omitted. This made a great lunch and I will have the leftovers for dinner. Added my picture and a bit more in IMI 9/7/14
