    Hey ElGourmand!
    I'm on a quest for ginger cookies that are crispy and full of heat that don't call for molasses. Molasses is expensive and hard to find in Israel. My last experiment used a thick sweet soy sauce and dark corn syrup. I do have a bottle of light corn syrup...maybe some concentrated instant coffee for colour...I need something to replace the smokiness of molasses...

    Hey Auntybea - I served this with salads - fresh green salad/ Israeli chopped tomato& cuke/mushroom salad/ dressing and cuke or cooked cauliflower/broccoli.
    It turns out pretty moist, but I bet a brown gravy would be tasty.
