When it comes to making wing sauce, any Louisiana hot sauce will do if you're trying to mimic the original recipe. For example, Crystal, Tabasco, Trappey's, Frank's, Durkee's, Louisiana Supreme are good. My friends that live near Buffalo prefer hotter sauce so they always add cayenne powder, black pepper, and sometimes chopped jalapenos or habaneros. Experiment with the different hot sauces and try adding onion and garlic powder. Serve the sauce warm if not tossing the wings in them. I prefer to bake my wings, serve them sauceless and present them with 2-3 home-made sauces depending on how wimpy my guests are:).

Hi there - i am not familiar with that side of the country, i would use whatever is the "popular" hot sauce in your neighborhood. the flavor is not as "peppery" as tabasco, but still has a firey kick to it. Good luck - try them and let nme know what you used.

Not all hot sauces are born equal. Frank's is also known as Louisiana and Durkee and they make the best Buffalo Wings.
