    Delicious! What a brilliant idea to cook the chicken chunks in the pepperoni fat! I cut this in half except I used a tad more than half the box of pasta. I had one chicken breast and one thigh and I don't know how much they weighed. Seasoned it all with Italian seasoning and a few twists of a sea salt/garlic grinder. I never measure my cheese. I just put on what looks "right" to me. I didn't have any parmesan for the final sprinkling. I love how uncovered baked pasta gets all crispy! Added a couple of pictures and a thread in IMI on 3/7/15.
