    Similar to what I've made before. My mom added a layer of zucchini, prepared just like the eggplant and potato for a three vegetable dish. Adding a spoonful of tomato paste gives the meat mixture a bit more "zing" as does using some fresh tomatoes.
    I'm trying to cut back on meat and just made a moussaka using a can of chick peas, mashed. When doing this one should use a bit more tomato.
    To Azziza, don't be afraid to make your own bechamel..it's easy.
    I don't know about marscapone cheese, I use parmesan and romano because it's easy to obtain and stock. Using the hard Greek cheese called kefalotiri will really enhance the flavor of the sauce...cheese is the key to good bechamel. Also sprinkling cheese over the layers of vegetables is a great idea..yum.

    I like to try new recipes, but I also like shortcuts. I have been unable to find Bechamel Sauce and I'd rather not make it from scratch because I don't think I'd do a good job. Can I substitute Marscapone Cheese instead? Please help.

    These were so delicious and easy to make. I've made two batches so far, one on a baking stone, and one on a regular cookie sheet. The ones made on the baking stone were much better. Five forks!!
