This was really good. A quick to make meal that won’t heat up your kitchen on a hot day. No need for steamed rice also. I made half of this recipe using pre-cut beef for stir fry from the grocery store and frozen stir-fry veggies. I sautéed some sliced onions with the beef. For me, onions belong in every stir fry recipe. I boiled the veggies in the skillet using chicken broth instead of water for about 3 minutes then added the Ramen noodles (do not break up the noodles) boiled for another 3 minutes. Cooking the veggies first avoided over-cooking of the noodles. I omitted using the seasoning packet that came with Ramen noodles, no need for it because of the stir fry sauce. After adding the stir fry sauce, the sautéed onions and beef - I only heated it till all was warm, about 90 seconds, certainly not the 3 – 5 minutes called for in the recipe.

Made this last night, and it was soooo delicious!! Friend who joined me said it was the best shrimp he'd ever eaten. REALLY yummy! But I think it'll be even better next time if I use sweetened flaked coconut instead of un-sweetened. For the dipping sauce I mixed up orange marmalade, spicy brown mustard, and a little soy sauce.
