Hi Phil, collards are a type of green vegetable, similar to kale. It is very popular in the South of the US. You could sub any other dark greens, such as kale, mustard greens, etc.

Sounds delicious! I love anything spicy (well not ANYTHING)! I've never heard of kashmiri chiles, but I'm sure I can find them. Also, what is asafoetida?

Spicy Chicken Curry

I'd love to try a 'true' curry sometime, but unfortunately I'd have to order away for a lot of the ingredients. I live in Washington State about 150 miles away from Seattle.
