What a cute little possum. I have never seen one so young. Thank you very much for your comments on the Beef Tongue recipe that I posted. I have honestly never seen fatty beef tongues but I'm sure they are out there ;-) I grew up enjoying beef tongue and we had it served warm, cold, in sandwiches, with sauces, horseradish, mustard you name it. I still love it but I only like it prepared in my kitchen. We have many deli's that will slice it as a coldcut but it's just not the same. I find there are too many sulfites and they just don't have the seasonings right. Thanks again and I hope you and your family have a wonderful Christmas!
