Thank you for the invite which I gladly accept. yes you could change it up with different vinegars. Just bought some sherry wine vinegar for the first time after hunting all over creation for it. It wasn't cheap, but worth it when you want to try different things. Looking forward to more great posts from you and to checking out some of the other great recipes you've shared.

Hi Lisa, As a matter of fact I did. I thought I wrote you about it already. They weren't very pretty but... but for my first time, I thought I did ok..... ;-)~ Some of the first few I put in broke apart while cooking and made quite the mess.....lol After that, I sealed them up much better and they came out much better. Your spinach chicken filling was killer. A really good combo... I dressed some with EVOO and some parsley and tossed some with an Olivada tepenade. I would like to find a nice light white sauce to dress them with and or fry some. Wish I could give you another 5. Thanks for asking... Hope you are having a great week so far. Jim

The suggestion of adding Italian Sausage is a great one! I love adding something spicy to a hearty stoup (stew soup)and as my hubby doesn't care for Chorizo ( which I and my eldest son LOVE), the Italian sausage would be a great compromise. I also have thought of taking notes as I cook, cause sometimes I make something really good that the whole family says "make that again , Mom" and I can't remember what I all put in it!LOL I see Michael Smith on Food TV's Chef at Home and he cooks like I do. He knows what flavors go together so he makes up recipes as he goes along based on what he has in the fridge, and then he writes down what he did. I have had a hard time with posting some of my recipes because of that. I could stand to be a bit more disciplined.
