Being a healthy southern soul food foodie simply means that I "reconstruct" some of the recipes that I grew up with...I season my beans & greens with smoked turkey legs and/or wings instead of ham hocks or smoked pork neck bones (I don't eat pork 'cuz it really does cause swelling..at least for me anyway!), and I use very little salt (if any) when cooking (I tell folks right off to season it at the table to their own liking..AFTER they've eaten half of it!)
I'm hoping to eventually try my hand at a cajun deep-fried turkey (I tried it for the 1st time at a cousin's in Summer 2008, & I was just absolutely BEYOND hooked; it was so juicy & flavorful!) Read more
