I just read your Newbie Group post and I feel for ya. I would like to suggest because Veal is a very popular in Italian dishes that maybe look up some Italian Veal recipes. The veal cut that is usually in Italian are normally dealing with a thinner cut of meat, which makes cooking time a lot shorter.
Try Veal scallopine which is a very romantic for two type of dinner. Veal marsla is very good too.
I don't know about the veal and cajun route though, just because I have never seen in cajun cooking using veal meat.
