About me
Cooking is about being with friends and family you love. It's nice when people know you well enough that you feel comfortable inviting them over for left over stew, salad and wine. I'm always trying new receipes on my new guests. I've been told it's a no-no but what better way to get feedback. For me cooking isn't just about the results, it's about sharing something I do very well with people who appreciate it. My most popular dishes are dolmas, roasted bell pepper soup, roasted eggplant soup, an old quiche receipe a friend gave me in college (fullproof), and mom's meatballs and sauce receipe. (very time consuming but worth it). I also make my own stocks, Glace de Viande, bread, chili sauces and have start spending more time doing Mexican and Middle Eastern food. Starting to dabble in chaucuterie.

RE: your question on my salmon dip... If you substitute canned "smoked" salmon you'll achieve the same basic result. You could use regular canned salmon but you wouldn't get the unique flavor of smoked salmon. Being in Cathlamot WA you should surely be able to find the smoked. You're in salmon heaven! Gosh I miss WA... I'm from Vancouver and Seattle.


Yes..I remember that ,too, I wonder why they are more expensive now.. Well it's a basic stew so you can sub any meat tou like essentially..

Great post
Shocking the calamari in an ice bath is essential step as you know calamari is unforgiving and will get tough if over cooked even a little. I love the heat too
