    I used to be the Saucier and some things just come on auto pilot for me.
    What Is A Saucier?
    A Saucier is the third highest position in most kitchens, below only the chef and the sous chef. The word saucier (so-see-ay) is French and, translated, means ‘sauce chef’.

    What Does A Saucier Do?

    As the name implies, the saucier is responsible for most of the sauces in the kitchen. This position in the kitchen is also usually responsible for soups, stews, and hot hors d’oeuvres. The book, Le Guide Culinaire, by respected author/chef Auguste Escoffier, says that a saucier is “ responsible for all sautéed items and most sauces.”

    Just remembered OCU Time on Church. My friend's husband loves sushi so they go there. I don't know anything about sushi!

    OK - I've heard of G&G. I think there is one place here that is an actual butcher kind of place. I will check there.
    Branches closed but now has re-opened as Crush and lots of people are raving about that. I haven't gone yet. The owners have one in Chico as well. I'm not too much into sushi but I hear Oharu is very good. Its kind of a hole in the wall in the 500 block of North State. Walter's Cafe has sushi, too, as well as a whole lot of other stuff. I eat there quite often as they have a huge menu. There is a new place called Saucy (they have a website) that is supposed to be really good, too, although I haven't tried it. Its pizza. Supposedly some person from Fort Bragg who owns a similar place over there opened up this one. I also hear someone else has reopened The Hopland Brewery, which used to be great for burgers.
    I don't think Ukiah is known for its fine dining establishments. :-P
