Yes, you´re right agave syrup is expensive and I think that you could halve the amount of syrup and use the other half part of brown sugar or just use brown sugar instead of the syrup.
My option for agave syrup is due to healthy reasons, so I use it since I want to stuck to a low-carb but still healthy and yummy diet as much as I can by the meaning of using whole grains and flour, Stevia and agave syrup as sweeteners, i.e. complex carbs with low GI and so on...

Thanks for the comment on the muffins. I made them just the other day for the first time and my family loved them. I didn't get to try one though because that's too high calorie for me. But I like your healthy alternative so I'll try them again that way.

I can see you´re a pretty busy woman and think you know very well how to handle your home after 6 children. I only have 2, girl and boy, 26 and 30 years old and now I´m enjoying our life as my husband is pre-retired and we both have now lots of time for ourselves. I enjoy cooking and Patchwork and as you do, also try to make my cooking healthier and lighter, although I have a sweet tooth I try to restrain myself and to use as many natural sweeteners (and lesser amount) as I can and only whole spelt flour is in my pantry for about two years now. I´m also experimenting with quinoa, millet and of course all kind of whole grains I have on hand. They´re pretty good, you just only have to start to use little by little and then you´ll soon find yourself eating lots of interesting new and healthy food.
