I can not get Hershey bars but can get Dove so I thought about doing that already because of the lack of baking chocolate. Baking, well that is another issue. Ovens are not in the homes in China, go figure. I use a toaster oven and often my experiments are lackluster. As far as a double boiler is concerned, my understanding is that the ingredients go in the top pan and water is placed in the bottom pan. I assume I must have a lid for the top pan as well. Is this correct? I am sorry I have actually never used a double boiler but know about them.
