As an example, I recently made Carnitas. I saw something on one of the late night shows where they cooked the pork in beer. Sounded good to me, so I went out and got some pork butt. Seasoned it all up and browned it in the pot, then filled the pot with 4 Sam Adams Winter Ale and 1 bottle of Sam's Holiday Porter. I then added about 4-5 ounces of a good Tequila for a little extra zip. All the usual spices, bay leaf, etc., and in about 3.5 hours, I had some pretty incredible pork. Picked through it, getting rid of all the bone and junk, shredded it, and served burrito-style with a Key Lime and Garlic salsa, plus Sour Cream. Never thought to try soft corn tortillas, but I'd guess that would have been even better. So, I say lose the bouillon cubes, water and chicken stock, and do it with a good beer. Man, that was awesome.
Other "about me" stuff: I'm 49, single, and love spending time with my grandkids. Special, special people.
